Peanut Butter Cookies

Makes 48 servings

low cholesterol and made with spelt flour - also good with added dark chocolate chunks!

Ingredients
1/2 cup soya margarine
130 g organic crunchy peanut butter, no added sugar
1/2 cup brown sugar
4 tbsp splenda
1 omega-3 egg
1/2 tsp pure vanilla extract
1 1/2 cup spelt flour
1 tsp baking soda
1/2 tsp cinnamon
Directions
  1. preheat oven to 180°C

  2. cream margarine and peanut butter, then beat in sugar & splenda

  3. add egg, vanilla - beat until creamy

  4. stir in flour, baking soda and cinnamon (and chocolate chunks)

  5. drop onto cookie sheet by small teaspoonfuls - they won't spread out much so flatten them if you want to, i actually think they're cute unflattened :)

  6. bake 10mn
