Hawaiian-Style Pineapple Upsidedown Cake Recipe

A kick in the pants dessert!!

Ingredients
15 Servings
6 Egg Whites
1/2 cup
2 cups
1 cup
1/4 cup Raisins
2 tbs
1/4 cup Splenda Granular
1/4 cup Splenda Brown Sugar
1/8 cup
1 cup Water
1/2 cup Liquor
Directions
  1. Preheat Oven to 350*

  2. Make the cake mix as usual (the one I made was a box mix asking for 3 eggs, 1/3 cup oil - in which I used Unsweetened Applesauce, and 1 cup water). A great way to cut cals and fat is to use only egg whites... in which case use 2x as much egg whites (i.e. use 6 egg whites in lieu of 3 whole eggs)

  3. In a frying pan, heat up:

  4. Pineapple Chunks (1 can drained)

  5. 10 Cherries (I used the plain old fashioned frozen pitted ones)

  6. 1 handful of raisins

  7. 2 Tbs of Margarine (I like Smart Balance), 1/4 Cup Packed Brown Sugar (cut cals and use Splenda Brown Sugar!!)

  8. 1/4 Cup Powdered Sugar (again, you can totally use Splenda here!!)

  9. and a sprinkle of Coconut/Imitation Coconut Extract

  10. 1/2 Cup Apricot Brandy or some kinda yummy liquor

  11. Cook this on med-high for about 10-15 mins to get it bubbly and kinda goopy.

  12. Spread the pineapple mix in a 13x9 pan. Spread the cake mix evenly to cover over the top. Bake it for 40 mins. (give or take for temp and elevation). And make sure to wait about 1hr before serving!!! The cake soaks up the mixture on the bottom and then you need no frosting or even whip really! :D
