can sub broccoli for spinach
| 4 | oz bacon |
| 1/2 | onion, thinly sliced |
| 6 | eggs |
| 3/4 | cup heavy cream |
| 20 | oz frozen spinach |
| 1/2 | lb cheese, shredded |
| 1/2 | tsp salt |
| 1/4 | tsp pepper |
- Heat oven to 350. Butter 9" deep pie plate.
- In large skillet over med heat, cook bacon until crisp. Drain on paper towels; coarsley chop.
- Remove all but 1 tbsp of bacon grease; add onion and cook 5 min, until softened but not brown. In large bowl, combine eggs. cream, spinach, cheese, salt and pepper. Stir in bacon & onions.
- Pour mixture into prepared pan. Bake 1 hour & 15 min (tenting with foil, if necessary, to prevent overbrowning) or until knife inserted in center comes out clean. Cool 5 min before cutting into wedges.
