Crustless Quiche Recipe

can sub broccoli for spinach

Ingredients
4 oz bacon
1/2 onion, thinly sliced
6 eggs
3/4 cup heavy cream
20 oz frozen spinach
1/2 lb cheese, shredded
1/2 tsp salt
1/4 tsp pepper
Directions
  1. Heat oven to 350. Butter 9" deep pie plate.

  2. In large skillet over med heat, cook bacon until crisp. Drain on paper towels; coarsley chop.

  3. Remove all but 1 tbsp of bacon grease; add onion and cook 5 min, until softened but not brown. In large bowl, combine eggs. cream, spinach, cheese, salt and pepper. Stir in bacon & onions.

  4. Pour mixture into prepared pan. Bake 1 hour & 15 min (tenting with foil, if necessary, to prevent overbrowning) or until knife inserted in center comes out clean. Cool 5 min before cutting into wedges.
