White Chocolate Cranberry Cookies (Reduced Calorie/Diabetic) Recipe

| 1/3 | cup of Smart Balance |
| 1/4 | cup Splenda Brown Sugar |
| 1/3 | cup Splenda |
| 1 | whole egg |
| 1 | tsp vanilla extract |
| 1 1/2 | cup all purpose flour |
| 1/4 | tsp of salt |
| 1/2 | tsp of baking soda |
| 1/2 | cup of dried cranberries |
| 1/2 | cup white chocolate chips |
- In large mixing bowl, beat "butter" and sugars until blended completely - about 2 minutes
- Beat in egg and vanilla extract
- Combine flour, salt, and baking soda; gradually add to "butter mixture", mix well
- Stir in white chocolate and dried cranberries
- Drop by heaping tablespoons onto baking sheets coated with cooking oil (if cookie sheet do not use cooking oil).
- Bake at 375F for 8 to 10 minutes or until lightly brown
- Yields two dozen cookies
