White Chocolate Cranberry Cookies (Reduced Calorie/Diabetic) Recipe

Ingredients
1/3 cup of Smart Balance
1/4 cup Splenda Brown Sugar
1/3 cup Splenda
1 whole egg
1 tsp vanilla extract
1 1/2 cup all purpose flour
1/4 tsp of salt
1/2 tsp of baking soda
1/2 cup of dried cranberries
1/2 cup white chocolate chips
Directions
  1. In large mixing bowl, beat "butter" and sugars until blended completely - about 2 minutes

  2. Beat in egg and vanilla extract

  3. Combine flour, salt, and baking soda; gradually add to "butter mixture", mix well

  4. Stir in white chocolate and dried cranberries

  5. Drop by heaping tablespoons onto baking sheets coated with cooking oil (if cookie sheet do not use cooking oil).

  6. Bake at 375F for 8 to 10 minutes or until lightly brown

  7. Yields two dozen cookies
