A quick and easy curry- that is also very healthy!
| 1/4 | tinned tomatoes |
| 1 | onion |
| 15 | g butter or oil |
| 4 | cups mixed vegetables |
| 58 | g fresh coriander |
| 1/2 | teaspoon salt |
| 1 1/2 | teaspoon garam masala |
- Put the butter and chopped onion into the pan. Leave the onion slightly chunky for better flavour. Cook on low heat until brown. Turn up the heat once onion is a golden brown colour and then add the chopped tomatoes. Add salt and garam masala and let simmer for 5 mins on low heat.
- Turn the heat up again to full and add the mixed vegetables. Stir in for 5 minutes and then reduce the heat to low. Let cook for about 20 mins.
- Turn the heat up again and stir for about another 5 minutes, drying out all the water. Add the coriander and stir for another 2-3 mins.
- Serve while hot with chappatis or rice.
