| 1 | cup all-purpose flour |
| 1 | tablespoon baking powder |
| 1/2 | teaspoon baking soda |
| 1/8 | teaspoon kosher salt |
| 1 | banana, mashed |
| 1/4 | cup unsweetened applesauce |
| 1 | egg |
| 1 1/2 | teaspoon vanilla extract |
- preheat oven to 350F
- blend wet ingredients in a bowl
- mix dry ingredients in a separate bowl
- add wet mix to dry, and stir until just combined
- scoop mix into muffin tin
- sprinkle with cinnamon if desired
- bake 15-20 minutes, or until a toothpick comes out clean.
