Jeanne's Red Beans and Rice Recipe

Makes 20 servings


Delicious and Easy

Ingredients
2 cups red beans
1 large onion
2 green bell peppers
2 lbs. sausage
1 lb. tasso
12 oz. turkey bacon
6 tablespoons country crock
3 cups celery
8 cups cooked white rice
3 tablespoons crumbled bay leaves
Directions
  1. Boil beans in 6 quart dutch-oven for 2 hours

  2. Melt margarine and saute veggies in 10 quart pot

  3. Chop up all meat into bite size pieces and add to veggie mixture

  4. Add contents of the 6 quart pot to the contents of the 10 mquart pot

  5. Simmer for 3 hours stirring occasionally, mash beans on side of pot the thicked the mixture as you stir

  6. Season to taste
