Weekend Breakfast Treat - WBT
| 120 | g eggs |
| 20 | g tomato |
| 15 | g red onions or spring onions |
| 20 | g green pepper |
| 5 | g peppers, hot chili green |
| 1 | tsp extra virgin olive oil |
| 1 | salt to taste |
- De-seed tomato and dice into little cubes
- Chop onion and peppers into tiny pieces
- Whisk eggs till fluffy
- Heat olive oil in pan over medium heat
- When oil is hot evenly spread tomato, onion and peppers
- Pour eggs over and cook till solid
- Turn/flip egg till light brown or desired colour
- Serve hot
