| 2 | t yeast |
| 30 | g honey |
| 30 | g vital wheat gluten |
| 1 | cup whole grain flour |
| 1 1/4 | cup unbleached flour |
| 1 | cup water |
- Warm water to 105 F
- Dissolve yeast, salt, honey in water
- Add melted butter.
- Add flours and VWG reserving 1/4 cup flour
- Turn out onto clean counter or board.
- Using the last 1/4 cup knead for 10 minutes.
- Let rise for an hour in covered bowl in warm place
- Roll out to 3/8 inch thick. Using can or large biscuit cutter, cut into 10 rolls.
- Place on greased baking sheet. Barely touching.
- Let rise 45 minutes.
- Bake 20 minutes at 350
