Light salad for lunch or main course
| 12 | ounces bow tie pasta |
| 1 | cup sundried tomatoes |
| 1 1/2 | cup arugula or lettuce chopped |
| 1/2 | cup chopped scallions |
| 1 | cup chopped cucumbers |
| 2 | tablespoons Parmesan cheese |
| 3 | tablespoons olive oil |
| 1 | tablespoon white wine vinegar |
| 1 | teaspoon sugar |
| 1 | tablespoon mustard |
| 1/4 | cup chopped basil |
| 1 | teaspoon salt |
| 1/2 | teaspoon pepper |
- Whisk together olive oil, vinegar, sugar and mustard in a bowl, season with salt and pepper to taste and then stir in basil.
- Follow package instructions for cooking bow tie pasta. Drain and put in salad bowl. Add the tomatoes, scallions, cucumber, arugula, and season to taste with salt and pepper. Sprking with Parmesan cheese and serve.
