Zucchini Bread Recipe

Zucchini Bread

Ingredients
3 eggs
3/8 c. olive oil
3/8 c. Apple sauce
1 1/4 c. sugar
2 c. zucchini, well drained
2 teaspoon vanilla
1 c. chopped nuts (walnuts)
2 c. flour
1/4 teaspoon baking powder
2 teaspoon baking soda
3 teaspoon cinnamon
1 teaspoon salt
Directions
Beat eggs in a bowl. Stir in oil, sugar, zucchini and vanilla. Add flour to powder, soda, cinnamon and salt. Stir into egg mixture until blended. Stir in nuts/raisins. Pour into 2 well greased loaf pans. Bake at 375 degrees for one hour (or until toothpick is clear).
