| 2 | tablespoon balsamic vinegar |
| 6 | tablespoons grated Parmesan |
| 1 | teaspoon dry oregano |
| 3 | ounces croutons |
| 1/4 | teaspoon ground black pepper |
| 1/2 | teaspoon chili powder |
| 1/2 | teaspoon dried thyme |
| 1/2 | onion, roughly chopped |
| 1/2 | carrot, peeled and broken |
| 2 | cloves garlic |
| 18 | ounces ground beef |
| 1 | teaspoons kosher salt |
| 1 | egg |
| 1 | teaspoon hot sauce |
- Put all the vegetables in a food processer, chop until fine.
- Mix the croutons and spices, blend until fine.
- Mix all the ingredients until well mixed.
- Form into 1 oz balls, bake or pan fry until internal temp is 160f.
