Pizza Sandwich Recipe

NOTE: Focaccia bread can be found in the bakery section of most supermarkets. It is often available in different flavors, such as tomato, herb, cheese and onion.

Ingredients
12 oz (1 loaf) Italian bread or focaccia bread
1/2 cup prepared pizza sauce
20 slices pepperoni
8 slices (1 oz each) mozzarella cheese
2 1/4 oz (1 can) sliced mushrooms, drained
1 tsp red pepper flakes (optional)
2 tbsp olive oil
Directions
  1. Place bread on cutting board; cut in half horizontally. Spread cut sides of both halves with pizza sauce. Layer bottom half with pepperoni, cheese and mushrooms; sprinkle with red pepper flaked, if desired. Close sandwich with top half of bread. Brush outsides of sandwich lightly with olive oil.

  2. Place large nonstick skillet over medium heat until hot. Add sandwich; press down lightly with spatula or weight down with small plate. Cook sandwich 4 to 5 minutes per side or until cheese melts and sandwich is golden brown. Cut into wedges to serve.
