Thai Grilled Chicken

Ingredients

cup fresh basil |
| 1/4 |
cup fresh mint |
| 1/4 |
cup fresh cilantro |
| 2 |
tbsp. chopped ginger |
| 2 |
tbsp. chopped garlic |
| 1 |
tbsp. soy sauce |
| 1 |
tbsp. fish sauce |
| 1 |
tbsp. vegetable oil |
| 1 |
tbsp. brown sugar |
| 1 |
cup chopped red pepper |
| 4 |
chicken breast |
Directions
- Preparation
- Place the above ingredients – except for the chicken - in the food processor and blend until finely chopped.
- Place a large Ziplock bag in a crockpot for stability.
- Place the mixture from the food processor into the large Ziplock bag in the crockpot.
- Take a bag of chicken from the fridge and place the chicken in the Ziplock bag in the crockpot.
- Seal the bag, squeezing out as much air as possible.
- Refrigerate overnight.
- Cooking
- Heat the grill to low heat.
- Clean the grill well and rub lightly with oil.
- Place the chicken on the grill and cook slowly for about 10 minutes per side or until the chicken is no longer pink in the middle.
- Serve with Thai Noodle Salad .
