Thai Grilled Chicken

Thai Grilled Chicken

Ingredients
1/4 cup fresh basil
1/4 cup fresh mint
1/4 cup fresh cilantro
2 tbsp. chopped ginger
2 tbsp. chopped garlic
1 tbsp. soy sauce
1 tbsp. fish sauce
1 tbsp. vegetable oil
1 tbsp. brown sugar
1 cup chopped red pepper
4 chicken breast
Directions
  1. Preparation

  2. Place the above ingredients – except for the chicken - in the food processor and blend until finely chopped.

  3. Place a large Ziplock bag in a crockpot for stability.

  4. Place the mixture from the food processor into the large Ziplock bag in the crockpot.

  5. Take a bag of chicken from the fridge and place the chicken in the Ziplock bag in the crockpot.

  6. Seal the bag, squeezing out as much air as possible.

  7. Refrigerate overnight.

  8. Cooking

  9. Heat the grill to low heat.

  10. Clean the grill well and rub lightly with oil.

  11. Place the chicken on the grill and cook slowly for about 10 minutes per side or until the chicken is no longer pink in the middle.

  12. Serve with Thai Noodle Salad .
