Crab Stuffed Chicken Breasts
|
Ingredients

chicken breast |
| 1/2 |

cup crab, drained flaked and cartilage removed |
| 1/4 |
cup sliced water chestnuts , drained and chopped |
| 2 |
tbsp. dried breadcrumbs |
| 2 |
tbsp. reduced fat mayo |
| 1 |
tbsp. chopped fresh parsley |
| 1 |
tsp. Dijon mustard |
| 6 |
tsp. Worcestershire sauce - divided |
| 2 |
tbsp. green onions |
| 3 |
slices lowfat Swiss cheese |
Directions
- Preparation
- Take the bag of chicken from the fridge.
- Sprinkle the chicken with salt and pepper.
- In a small bowl, combine the following:
- ½ cup crabmeat
- ¼ cup water chestnuts
- 2 Tbsp. breadcrumbs
- 2 Tbsp. mayo
- 1 Tbsp. fresh parsley
- 1 tsp. mustard
- 2 tsp. Worcestershire sauce
- 1 Tbsp. green onion
- Chop 1 cheese slice and stir into the crab mixture.
- Divide the crab mixture evenly over the 6 chicken breasts and roll up – securing with a toothpick. Place the chicken in a foil pan coated with Pam.
- In a small container place 4 tsp. of Worcestershire sauce. Cover with a lid.
- In a small Ziplock bag, place 2 slices of Swiss cheese. Seal the bag, squeezing out as much air as possible.
- Place the small container with the Worcestershire sauce and the bag with the Swiss cheese in the foil pan with the chicken and cover with a lid.
- Cooking
- Thaw completely in the fridge.
- Heat the oven to 350F.
- In a large, non stick skillet coated with cooking spray brown the chicken on all sides.
- Place the chicken seam side down in the foil pan.
- Brush the chicken with the remaining Worcestershire sauce. Bake uncovered for 25 minutes.
- Cut each remaining cheese slice into 6 strips and place 2 strips on each chicken breast.
- Bake 5 minutes longer
- Discard the toothpicks. Sprinkle with a few fresh thinly sliced green onions.
