New and Improved Chicken Paprikash Recipe

Makes 8 servings


A Hungarian dish sometimes served with noodles or rice.

Ingredients
2 pounds chicken
4 teaspoons paprika
1/2 cup margarine
1 large onion, chopped
2 cups water
1/2 can chicken broth
2 cups low fat cottage cheese
4 tablespoons skim milk
2 tablespoons lemon juice
1/4 cup whole wheat flour
Directions
  1. Sprinkle chicken with salt and paprika

  2. Melt margarine in a large Dutch Oven Pan and add Chicken (saute until golden)

  3. Turn chicken and add onion and 2 tablespoons paprika

  4. Simmer, covered, for 20 minutes

  5. Add 2 cups water and chicken broth and cook slowly until tender

  6. Remove chicken (keep warm)

  7. Combine cottage cheese, skim milk, and lemon juice in a food processor to create "Mock Sour Cream"

  8. Whisk this with 3/4 cup water and whole wheat flour until smooth

  9. Gradually add sour cream mixture to broth

  10. Stir over low heat until sauce has thickened

  11. Add paprika as desired

  12. Return chicken and keep on low heat until serving time
