| 2 | pounds chicken |
| 4 | teaspoons paprika |
| 1/2 | cup margarine |
| 1 | large onion, chopped |
| 2 | cups water |
| 1/2 | can chicken broth |
| 2 | cups low fat cottage cheese |
| 4 | tablespoons skim milk |
| 2 | tablespoons lemon juice |
| 1/4 | cup whole wheat flour |
- Sprinkle chicken with salt and paprika
- Melt margarine in a large Dutch Oven Pan and add Chicken (saute until golden)
- Turn chicken and add onion and 2 tablespoons paprika
- Simmer, covered, for 20 minutes
- Add 2 cups water and chicken broth and cook slowly until tender
- Remove chicken (keep warm)
- Combine cottage cheese, skim milk, and lemon juice in a food processor to create "Mock Sour Cream"
- Whisk this with 3/4 cup water and whole wheat flour until smooth
- Gradually add sour cream mixture to broth
- Stir over low heat until sauce has thickened
- Add paprika as desired
- Return chicken and keep on low heat until serving time
