| 1 1/2 | cup flour |
| 1/2 | cup brown sugar, packed |
| 2 | teaspoon baking powder |
| 1 | teaspoon ground cinnamon |
| 1/2 | teaspoon ground ginger |
| 1/8 | teaspoon salt |
| 1 | egg |
| 1/2 | cup applesauce |
| 1/2 | cup fat free sour cream |
| 1/2 | teaspoon vanilla |
| 1 | pear, cored and finely chopped |
- In a mixing bowl stir together flour, the 1/2 cup brown sugar, baking powder, cinnamon, ginger, and salt. Make a well in center of flour mixture. In a bowl beat egg; stir in applesauce, sour cream, and vanilla. Add all at once to flour mixture; stir just until moistened. Stir in pear.
- Line twelve muffin cups with paper bake cups; fill two-thirds full. Bake in a 400 degree F oven about 20 minutes or until golden. Serve warm.
- Makes 12 muffins.
