Beefy Spanish Rice
| 1 | tablespoon olive oil |
| 1/2 | cup uncooked converted white rice |
| 1/4 | cup chopped onion |
| 1/4 | cup chopped green bell pepper |
| 1/2 | pound ground beef |
| 1/2 | cup canned corn |
| 6 | ounces can tomato sauce |
| 1/4 | cup salsa |
| 1/2 | cup water |
| 2 | cloves garlic |
| 1 | Salt |
| 1 | Pepper |
| 1 | tsp Cumin |
| 1 | tsp Chili Powder |
- In a large saucepan over medium heat, heat the oil.
- Saute the onion and pepper until tender.
- Add the rice and garlic and saute for 5 minutes
- Add the ground beef brown. Drain excess oil and fat.
- Add the corn, tomato sauce, salsa, and water.
- Reduce heat to low, cover and simmer for 20 minutes or until rice is cooked, stirring occasionally.
- Season with spices to taste.
