Cool, summery, and low-cal

Ingredients
2 cups diced cucumber
2 cups diced red bell pepper
2 cups diced tomato
1/2 cup diced red onion
2 cups tomato juice
1/2 cup vinegar
1/3 cup extra-virgin olive oil
2 dashes Tabasco sauce
Directions
  1. Combine and refrigerate.

  2. Substitute: red wine vinegar for vinegar and V-8 for tomato juice.
