ham & veggies with whole wheat penne pasta
| 16 | ounces whole wheat penne pasta, cooked |
| 3 | tbsp. butter |
| 1 | clove garlic, minced |
| 2 | tbsp all-purpose flour |
| 2 | cups half and half |
| 1 | cup 2% milk |
| 2 | cups broccoli florets |
| 2 | cups mushrooms, sliced |
| 2 | cups zucchini, sliced |
| 2 | cups ham, cubed |
| 1/2 | cup parmesan cheese |
| 1/4 | tsp. pepper |
| 1/4 | tsp. dried oregano |
| 1/4 | tsp. ground nutmeg |
- In large saucepan, melt butter. Add garlic & saute until fragrant. Stir in flour until blended. Gradually stir in half & half and milk. Bring to boil over medium heat, stirring constantly.
- Add broccoli. Reduce heat & simmer uncovered about 5-7 minutes or until broccoli is crisp-tender. Add mushrooms & cook 2-3 minutes more. Stir in ham, parmesan cheese, pepper, oregano, & nutmeg. Add cooked pasta & stir.
