Turkey and Sausage Casserole Recipe

Makes 9 servings


Under 300 calories, but delicious. Makes 9 generous servings, freeze in individual servings for an easy low calorie meal!

Ingredients
1200 g casserole vegetables
600 g turkey meat
454 g Cumberland low fat sausages
156 g mushrooms
135 g pink lady apple
129 g cooking apple
1/2 cup low calorie stock
1 tbsp olive oil
1 tsp olive oil
237 g parsnips
25 g garlic
Directions
  1. Use a little of the olive oil to brown the vegetables

  2. Use the remainder of the oil to brown the meat and the sausages in a separate pan.

  3. Add 1 litre of water with stock cube or stock to the vegetables and combine with meat in large casserole dish

  4. Add remaining ingredients with herbs and salt and pepper to taste

  5. Simmer for 1.5 hours
