spicy sweet potato, spinach and chick pea curry - very comforting, specially with feta on top.
| 30 | ml oil |
| 2 | tsp cinnamon |
| 2 | tsp curry powder |
| 600 | g sweet potato, cubed |
| 100 | g spinach, sliced |
| 300 | g chick peas, cooked, drained |
- Heat oil, and add cinnamon, curry powder and any other spices you may like (2 or 3 cardamom pods are good).
- Add sweet potato, fry to coat with spices, and then cover, lower heat and cook until nearly done.
- Add spinach, cover and cook until just tender.
- Add chick peas (and optional 50g of feta), heat through and serve over brown rice.
