Sweet Potato Curry Recipe

spicy sweet potato, spinach and chick pea curry - very comforting, specially with feta on top.

Ingredients
30 ml oil
2 tsp cinnamon
2 tsp curry powder
600 g sweet potato, cubed
100 g spinach, sliced
300 g chick peas, cooked, drained
Directions
  1. Heat oil, and add cinnamon, curry powder and any other spices you may like (2 or 3 cardamom pods are good).

  2. Add sweet potato, fry to coat with spices, and then cover, lower heat and cook until nearly done.

  3. Add spinach, cover and cook until just tender.

  4. Add chick peas (and optional 50g of feta), heat through and serve over brown rice.
