Very veggie burrito filling.
|
Ingredients
| 3 |
cups onion, chopped |
| 1 |
cup red bell pepper, chopped |
| 1 |
cup poblano pepper, chopped |
| 1 |
cup corn, cut off of cob |
| 1 |
tbsp garlic, minced |
| 100 |
grams tomato, chopped |
| 450 |
grams Ro Tel |
| 450 |
grams Fat Free Refried Beans |
| 1/4 |
cup lime juice, fresh squeeze |
| 3 |
tbsp cilantro, chopped |
| 1 |
pinch salt |
| 1 |
pinch oregano |
Directions
- Sweat the first six ingredients until onions turn clear.
- Add Ro-Tel and stir on medium high heat for 2 minutes.
- Add refried beans and stir on medium high heat for 2 minutes.
- Add remaining ingredients, stirring constantly for five more minutes. When cilantro turns dark green, the filling is ready.
- Pour into tortillas for burritos.
