Light cream sauce for pasta dish.
| 1 | cup low-fat cottage cheese |
| 1/4 | cup light cream cheese |
| 2 | tbsp Parmesan cheese, grated |
| 1 | clove garlic, minced |
| 1 | cup tofu |
| 1/4 | tsp nutmeg, ground |
| 1/4 | tsp salt |
| 1/4 | tsp pepper, ground |
- In blender or food processor, purée cottage cheese, tofu, cream cheese, Parmesan, garlic, nutmeg, salt and pepper until smooth.
- In large pot of boiling salted water, cook pasta for 7-8 minutes. Drain well and return to pot. Add cheese mixture, tossing to cat well with sauce.
