Everyday Pancakes

Makes 4 servings

Tribune recipe

Ingredients
2 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
2 cups milk
2 tablespoons melted butter
1 tablespoon butter for griddle
Directions
  1. Heat a griddle or large skillet over medium-low heat. Combine flour, sugar, baking powder and slat in a lrge bowl; set aside. Beat the eggs in a medium bowl: beat in milk. Stir in 2 tablespoons butter. Gently stir this mixture into dry ingredients, mixing only enough to moisten the flour; don't worry about a few lumps.

  2. Palce butter or oil in on the griddle; heat until hot and foam subsides. Ladle batter onto the griddle. Flip pnacakes after bubbles rise to surface and bottoms brown, 2-4 minutes.

  3. cook till second side is lightly browned, 2 minutes. Serve or hold on ovenproof pate in 200-degree oven up to 15 minutes.
