| 1 | cup sugar |
| 2 | bananas |
| 1/2 | cup butter, softened |
| 2 | eggs |
| 1 | teaspoon vanilla |
| 1 1/4 | cup flour |
| 1 | teaspoon baking soda |
| 1/2 | teaspoon salt |
| 3/4 | cup pecans |
- Preheat oven to 350 degrees.
- Mash bananas with sugar and let stand 5 minutes.
- Sift together flour, baking soda, and salt.
- Cream butter into banana mixture. Add eggs one at a time and blend well. Add vanilla.
- Slowly add in flour mixture. Add nuts if desired. Do not over-mix!
- Pour batter into greased loaf pan and bake for 55 minutes or until a toothpick comes out clean.
