Summer Squash Quiche

Ingredients
| 6 |
large egg whites |
| 2 |
large egg yolks |
| 1 |
cup mushrooms |
| 1 |
cup summer squash |
| 1 |
cup zucchini |
| 1 |
clove garlic |
| 1/2 |
c onion |
| 1 |
tsp canola oil |
Directions
- Coat quiche dish with oil. Mix egg whites an yolks with milk and pour into quiche dish. Saute onion in a small amount of oil until it begins to brown, add garlic, zucchini, and squash. Then add mushrooms. Cool slightly and add to egg mixture. Stir to distribute evenly. Bake at 325 degrees for 1 hour or until knife inserted into center comes out clean. Quick Tip: Combine all ingredients, cover with paper towel and cook in microwave oven for 2 1/2 to 3 1/2 minutes, until eggs are thoroughly cooked.
