This is a chilled custard dish, it can be made with any citrus juice & zest
| 2 1/4 | cups cream, heavy |
| 3/4 | cup sugar |
| 1 | teaspoon sugar |
| 3 | tablespoons lemon juice, fresh |
| 2 | tablespoons lime juice, fresh |
| 1 | teaspoon lemon zest |
| 1 | teaspoon lime zest |
- Bring cream and 3/4 cup sugar to boil over medium-high heat
- Stir until sugar dissolves
- Boil 3 minutes stirring constantly; adjust heat as needed to prevent mixture from boiling over
- Remove from heat
- Stir in lemon juice and lime juice
- Cool 10 minutes
- Stir mixture again and divide among 5 or 6 1/2 cup ramekins or custard cups
- Cover and chill until set, at least 4 hours or overnight
- Mix 1 teaspoon sugar, lemon and lime zest in small bowl and sprinkle over possets
