great with soup and a dinner roll for a light lunch with friends

Ingredients
2 cups spring mix - baby blends
100 g cherry tomatoes
50 g cucumber (sliced)
1/3 med avocado (sliced)
20 g cheddar cheese (cubed)
25 g pancetta (sliced thinly and grilled)
1 beetroot (cooked peeled and cut into wedges)
15 ml balsamic vinegar
Directions
toss all ingredients and serve with balsamic vinegar on the side
