| 1 | cup rolled oat (old fashioned oatmeal) |
| 1 | cup skim milk |
| 1 | cup flour |
| 1/2 | cup brown sugar, packed |
| 1/2 | cup unsweetened applesauce |
| 2 | ounces eggbeaters |
| 1 | teaspoon baking powder |
| 1/2 | teaspoon baking soda |
| 1/2 | teaspoon salt |
| 1/4 | teaspoon cinnamon |
- Soak oats in milk for 1 hour (or ½ hour for quick oats)
- Combine all ingredients in a large bowl
- Spoon into greased muffin pan
- Bake at 400F for 20-25 minutes
