Egg salad I made for my boyfriend, no tofu and very little mustard.
| 8 | egg whites, hard-boiled |
| 3 | tbs. smart balance mayonnaise |
| 1 | tsp. mustard |
| 1/8 | tsp. black pepper |
| 1/8 | tsp. paprika |
- Hard boil eggs.
- Peel eggs and remove yolks.
- Mash egg whites with fork or pastry cutter.
- Mix in mayo and mustard.
- Add black pepper and paprika to taste.
