Banana oat muffins with chocolate chips
| 1 | egg |
| 1/3 | cup vegetable oil |
| 3/4 | cup sugar |
| 3 | medium ripe bananas (1/3 cups), mashed |
| 2 | cups whole wheat flour |
| 1/2 | cup old fashioned oats |
| 3/4 | teaspoon baking soda |
| 1/2 | teaspoon baking powder |
| 1/2 | teaspoon salt |
| 3/4 | cup chocolate chips |
- Beat egg, oil & sugar until smooth. Stir in bananas. Combine the, oats, baking soda, baking powder, & salt; stir into banana mixture just until moistened. Stir in chocolate chips.
- Fill greased muffin cups 3/4 full. Bake at 375 for 18-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan onto wire rack.
