Cottage Cheese Biscuits

Makes 12 servings

Drop biscuits that are easy to make, and can be easily kicked into hot heat with some hot pepper sauce.

Ingredients
6 tbsp unsweetened apple sauce
2 1/2 tsp baking powder
1/4 tsp salt
250 g Nutriflour
2 tbsp fresh chives
2/3 cup skim milk
3/4 cup 1% cottage cheese
Directions
  1. Preheat oven to 425 degrees.

  2. Line baking sheet with foil. Grease foil (I used Pam and spread around with paper towel piece)

  3. In medium bowl mix flour, baking powder, salt. Using a pastry blender cut in applesauce (or butter - but then you add calories) until mixture resembles coarse crumbs.

  4. In small bowl combine cottage cheese, milk, chives, and hot peppers if desired. (Chili won't alter the calory info.)

  5. Using a fork stir just until moistened.

  6. Drop dough by generous tablespoonfuls onto baking sheet.

  7. Bake for approx 15-18 mins or until golden.

  8. Remove from oven. Best served warm - else cool on rack.
