Bran Muffins

Makes 60 servings

Bran muffins

Ingredients
2 1/2 cups white sugar
3/4 cups canola oil
5 cups flour
1 quart buttermilk
5 tsp baking soda
1 tsp salt
4 cups (Kelloggs All-Bran) cereal
2 cups (Post 100% All-Bran) cereal
2 cups boiling water
4 eggs, beaten
Directions
  1. Pour boiling water over post 100% all bran. Let stand to cool.

  2. Cream oil and sugar. Add beaten eggs and buttermilk. Add Kelloggs All-Bran. Sift flour, soda and salt together and add to creamed ingredients. Fold in Post All-Bran mixture. Put in large container and put into refrigerator. Can be kept up to 6 weeks. Put in greased muffin tins. Bake 15-18 minutes at 400%
