Zomg! I don't think everyone will like this, but to me...I came up with this last night, and it's delicious! The pudding was a bit runny, but still very creamy and thick (possibly because I accidentally let it lump up a bit...I have the attention span of a gnat ^^;).

Ingredients

c Splenda Granular |
| 3 1/2 |
tbs cornstarch |
| 1/8 |
teaspoon salt |
| 1 1/4 |
cups soymilk |
| 3/4 |
teaspoon vanilla extract |
| 20 |
g golden raisins |
| 1 1/2 |
tsp allspice |
| 185 |
g sweet potatoes |
Directions
- Slice sweet potatoes into 1/2 inch medallions. Place in a bowl of water, and nuke for ~5 min.
- Make pudding. Basically, throw all ingredients into the pan, warm through until thickened, and stir constantly. It'll try to lump up if you don't. >P (Note: on the "allspice", I just used about .25 tsp each of cloves, ginger, and nutmeg, and just over a half tsp of cinnamon. ^-^)
- Pam up a frying pan. Remove taters from microwave and throw on pan. Cook about two or three minutes each side. I sprinkled mine with cinnamon as it cooked.
- Transfer sweet potatoes to a plate, and dump pudding atop it.
- NOM NOM NOM. =D
