Orange Humus Recipe

Makes 12 servings


a flavorful, light spread

Ingredients
1 1/2 c chick peas
1/4 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp ground ginger
1/4 tsp dry mustard
1/4 tsp turmeric
1/4 tsp paprika
1/2 c orange juice
1/4 c tahini
1 1/2 tsp salt
2 tbsp cider vinegar
2 garlic cloves, crushed
3 scallions, minced
2 tsp soy sauce
Directions
  1. soak the chick peas overnight, then cook in boiling water for 2 hrs until soft.

  2. Drain and mash well.

  3. combine the peas with all the remaining ingredients.

  4. cover and chill.
