Zucchini Lemon Cake Recipe

Makes 12 servings


1 zucchini to make a delicious bread/cake and top with rolled oat before baking.

Ingredients
2 cups self-raising flour
1 banana
150 ml vegetable oil
200 g brown sugar
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
165 g grated zucchini
1 teaspoon orange extract
Directions
  1. Mix flour, salt, cinnamon and nutmeg in a small bowl.

  2. Beat banana and brown sugar in a large bowl for 5 minutes, slowly add in oil and extract and continue beating.

  3. Stir in zucchini and optional 60g pecans.

  4. Stir in flour and pour into prepared greased and floured pan.

  5. Bake for 175C, 50 minutes.
