| 2 | cups self-raising flour |
| 1 | banana |
| 150 | ml vegetable oil |
| 200 | g brown sugar |
| 3/4 | teaspoon salt |
| 1 | teaspoon cinnamon |
| 1/2 | teaspoon nutmeg |
| 165 | g grated zucchini |
| 1 | teaspoon orange extract |
- Mix flour, salt, cinnamon and nutmeg in a small bowl.
- Beat banana and brown sugar in a large bowl for 5 minutes, slowly add in oil and extract and continue beating.
- Stir in zucchini and optional 60g pecans.
- Stir in flour and pour into prepared greased and floured pan.
- Bake for 175C, 50 minutes.
