| 1 | lb. lean ground beef |
| 15 1/2 | oz red beans, drained |
| 1 | cup white onion, chopped |
| 1 | cup fresh cilantro, chopped |
| 3 | cloves garlic, minced |
| 1 | cup cheddar cheese, shredded |
| 1 | salt |
| 1 | pepper |
- Brown ground beef, reserve grease and set beef aside.
- Using grease from beef, sautee onions.
- Return beef to onions and add cilantro and garlic, cooking until cilanrto has wilted.
- Add beans, cooking until heated through.
- Salt and pepper to taste.
- Serve with cheddar cheese on top. Add a tbsp of sour cream and serve with a warm flour tortilla.
