Pineapple Pork Stirfry Recipe

A nice alternative to breading and frying your pork chops!

Ingredients
1 tbsp. sesame oil
2 cloves garlic, sliced
2 tbsp. fresh ginger, peeled and thinly sliced
1/2 onion, diced
4 pork chops, cubed
3 carrots, chopped
2 stalks celery, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
14 oz pineapple, in chunks
100 g mushrooms, chopped
1/4 c. reduced sodium soy sauce
1/4 c. sugar
1/4 c. apple cider vinegar
1 clove garlic, crushed
2 tbsp. cornstarch
1 pinch of cayenne
2 tbsp. cooking sherry
1 tbsp. sesame seeds
Directions
  1. In a large pot or wok, heat sesame oil.

  2. Saute 2 cloves garlic, ginger and pork at medium high until no longer pink.

  3. Add onion, carrots, celery, and peppers and saute for 2 minutes.

  4. Cover and simmer for 3 minutes or until tender crisp.

  5. In the meantime, combine soy sauce, sugar, vinegar, pineapple juice, cornstarch, 1 clove of garlic and cayenne in a microwave safe bowl.

  6. Cook for 1 1/2 minutes on high then whisk, and continue to cook for another 1 1/2 minutes.

  7. Whisk sauce again, adding sherry.

  8. Add pineapple chunks and sauce to stir fry.

  9. Toss with sesame seeds.

  10. Serve over rice.
