A nice alternative to breading and frying your pork chops!
| 1 | tbsp. sesame oil |
| 2 | cloves garlic, sliced |
| 2 | tbsp. fresh ginger, peeled and thinly sliced |
| 1/2 | onion, diced |
| 4 | pork chops, cubed |
| 3 | carrots, chopped |
| 2 | stalks celery, chopped |
| 1/2 | red pepper, chopped |
| 1/2 | green pepper, chopped |
| 14 | oz pineapple, in chunks |
| 100 | g mushrooms, chopped |
| 1/4 | c. reduced sodium soy sauce |
| 1/4 | c. sugar |
| 1/4 | c. apple cider vinegar |
| 1 | clove garlic, crushed |
| 2 | tbsp. cornstarch |
| 1 | pinch of cayenne |
| 2 | tbsp. cooking sherry |
| 1 | tbsp. sesame seeds |
- In a large pot or wok, heat sesame oil.
- Saute 2 cloves garlic, ginger and pork at medium high until no longer pink.
- Add onion, carrots, celery, and peppers and saute for 2 minutes.
- Cover and simmer for 3 minutes or until tender crisp.
- In the meantime, combine soy sauce, sugar, vinegar, pineapple juice, cornstarch, 1 clove of garlic and cayenne in a microwave safe bowl.
- Cook for 1 1/2 minutes on high then whisk, and continue to cook for another 1 1/2 minutes.
- Whisk sauce again, adding sherry.
- Add pineapple chunks and sauce to stir fry.
- Toss with sesame seeds.
- Serve over rice.
