A change from roasted white potatoes. (New recipe adapted from Southern Living's Sweet Potato Salad with Warm Bacon Dressing.)
| 550 | g yams, peeled and diced |
| 1 | cup onion, diced |
| 3 | slices turkey bacon, cooked and crumbled |
| 1 | tablespoon extra virgin olive oil |
- Preheat oven to 400F
- Place diced yams, and onion on a large non-stick cookie sheet. Drizzle with the olive oil, and toss gently to coat.
- Roast yam & onion mixture for 30-40 minutes, turning every 10 minutes to ensure they don't burn on one side.
- While yams are roasting cook and crumble turkey bacon and set aside.
- Once the yams have been roasted place in a large bowl and toss with the turkey bacon and serve.
