E's Roasted Yams with Bacon Recipe

A change from roasted white potatoes. (New recipe adapted from Southern Living's Sweet Potato Salad with Warm Bacon Dressing.)

Ingredients
550 g yams, peeled and diced
1 cup onion, diced
3 slices turkey bacon, cooked and crumbled
1 tablespoon extra virgin olive oil
Directions
  1. Preheat oven to 400F

  2. Place diced yams, and onion on a large non-stick cookie sheet. Drizzle with the olive oil, and toss gently to coat.

  3. Roast yam & onion mixture for 30-40 minutes, turning every 10 minutes to ensure they don't burn on one side.

  4. While yams are roasting cook and crumble turkey bacon and set aside.

  5. Once the yams have been roasted place in a large bowl and toss with the turkey bacon and serve.
