Tuna cakes
| 3 | oz. canned tuna |
| 1 | egg |
| 1 | tbsp. mayo |
| 20 | crackers |
| 1 | tbsp. mustard |
| 4 | oz. onion |
| 2 | tbsp. olive oil |
- heat olive oil in skillet over medium high
- crumble half the crackers and set aside for coating
- crumble the other half of the crackers and combine with the rest of the ingredients
- form into "cakes", then dredge in crumbled cracker coating
- place in hot oil for about 3-4 minutes per side
- makes 4 cakes
