Beef Pot Roast Recipe

extremely slow cooked the meat will melt in your mouth - delicious served with some steam brussel sprouts

Ingredients
600 g Beef Joint for roasting
1 small onion (quartered)
240 g sweet potato (washed not peeled)
600 g potatoes (washed not peeled)
2 carrots (peeled and left whole)
1 teaspoon horseradish
1 stock cube, beef
1 cup water
Directions
  1. Preheat oven to 140 celcius, place all ingredients in a heavy pan, coating beef with horseradish. crumble in stock cube and pour over water, place lid on pan.

  2. Cook in oven for 2 to 2.5 hours - meat will fall apart and vegetables will be roughly mashed from slow cooking, pour some of the pan juices over your meat when serving.
