| 600 | g Beef Joint for roasting |
| 1 | small onion (quartered) |
| 240 | g sweet potato (washed not peeled) |
| 600 | g potatoes (washed not peeled) |
| 2 | carrots (peeled and left whole) |
| 1 | teaspoon horseradish |
| 1 | stock cube, beef |
| 1 | cup water |
- Preheat oven to 140 celcius, place all ingredients in a heavy pan, coating beef with horseradish. crumble in stock cube and pour over water, place lid on pan.
- Cook in oven for 2 to 2.5 hours - meat will fall apart and vegetables will be roughly mashed from slow cooking, pour some of the pan juices over your meat when serving.
