| 1 | cup cooked black beans |
| 1 | cup white rice |
| 1 | yellow onion, diced |
| 3 | tablespoons canola oil |

- Combine rice and onion into a pot of heated oil, fry in mediem-high heaat until brown stirring constantly.
- Drain and rinse beans.
- Add beans and water to the rice mixture.
- Add salt and pepper to taste, bring to a boing.
- Reduce heat to low and simmer for approximately 15 minutes or until water is completely absorbed.
