Citrus Chipotle Shrimp

Ingredients

large shrimp |
| 1 |
tbsp. canola oil |
| 2 |
tsp. chipotle peppers |
| 2 |
cloves garlic |
| 1 |
salt and pepper to taste |
| 2 |
cups orange juice |
| 2/3 |
cup lime juice |
Directions
- Place shrimp in a shallow bowl. Combine oil, pureed chipotle peppers, garlic, salt and pepper. Add mixture to bowl and toss with shrimp to coat. Combine orange juice and lime juice and pour over the shrimp. Cover and refrigerate for 30 minutes to marinade.
- Remove shrimp from marinade and set aside. Heat marinade in a saucepan, bringing to a low boil and stirring for 5 minutes.
- Prepare a grill rack and heat outdoor grill, or use a grill pan over medium heat. Grill shrimp until done, about 1 or 2 minutes on each side. Serve with sauce.
