Ingredients

cups potatoes |
| 2 |
cups vegetable broth |
| 1/2 |
cup onion |
| 1/2 |
teaspoon salt |
| 1/4 |
teaspoon pepper |
| 1 |
cup sour cream, low fat |
Directions
- Peel and dice the potatoes & chop the onion
- Cook the potatoes and onion in the broth and season to taste.
- Puree half the soup and return it to the pot
- Just before serving, stir in the sour cream
- Garnish with fresh chives or parsley
