Simple, homemade pancake recipe. Oil may be substituted with melted butter.

Ingredients

cups flour |
| 3 |
tsp baking powder |
| 2 |
eggs |
| 4 |
tbsp oil |
| 1 1/4 |
cups lowfat milk |
| 1/4 |
cup sugar |
| 1/2 |
tsp salt |
Directions
- Sift together dry ingredients in a large bowl. Beat eggs in a small bowl. Add eggs, oil, and milk to dry ingredients. Stir until just combined.
- Spoon 1/4 cup of pancake mixture onto greased griddle/pan over medium heat. Turn over when top of pancake is covered with bubbles.
