Pancakes (Homemade)

Makes 12 servings

Simple, homemade pancake recipe. Oil may be substituted with melted butter.

Ingredients
2 cups flour
3 tsp baking powder
2 eggs
4 tbsp oil
1 1/4 cups lowfat milk
1/4 cup sugar
1/2 tsp salt
Directions
  1. Sift together dry ingredients in a large bowl. Beat eggs in a small bowl. Add eggs, oil, and milk to dry ingredients. Stir until just combined.

  2. Spoon 1/4 cup of pancake mixture onto greased griddle/pan over medium heat. Turn over when top of pancake is covered with bubbles.
