Breakfast muffins

Makes 4 servings

Yummy b-fast muffins.

Ingredients
3/4 cup whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp cinnamon
2 tbsp wheat bran
1/3 cup applesauce
1/2 cup pure pumpkin
2 tbsp toasted wheat germ
1/4 cup sugar
2 egg whites
Directions
  1. Pre-heat oven to 400 degrees.

  2. Lightly spray a muffin pan with nonstick olive oil spray.

  3. Mix together the first five ingredients.

  4. Mix together the flaxseed and water to replace eggs.

  5. Mix together the remaining ingredients and add the "egg".

  6. Blend the dry ingredients into the wet mixture (may need more applesauce).

  7. Bake in FOUR muffin tins for 15 to 17 minutes or until a toothpick comes out clean.

  8. Enjoy!
