Carrot thyme soup

Makes 4 servings

Elegant and fast soup

Ingredients
1 pound carrots
6 cups chicken stock
1 tbsp fresh thyme
2 tbsp butter
1 onion diced
1/2 cup cream
Directions
  1. Cut carrots into coins, and cook in chicken stock until tender

  2. separately sweat onions in butter, add fresh thyme the last minute.

  3. When carrots are cooked puree the mixture in a blender.

  4. Add the onions then add the cream. Bring to a simmer and then turn off.

  5. Adjust seasoning.

  6. Can be served with a drizzle of cream on top and garnished with a bit of fresh thyme leaves. Lemon thyme is nice.
