Elegant and fast soup

Ingredients

pound carrots |
| 6 |
cups chicken stock |
| 1 |
tbsp fresh thyme |
| 2 |
tbsp butter |
| 1 |
onion diced |
| 1/2 |
cup cream |
Directions
- Cut carrots into coins, and cook in chicken stock until tender
- separately sweat onions in butter, add fresh thyme the last minute.
- When carrots are cooked puree the mixture in a blender.
- Add the onions then add the cream. Bring to a simmer and then turn off.
- Adjust seasoning.
- Can be served with a drizzle of cream on top and garnished with a bit of fresh thyme leaves. Lemon thyme is nice.
