| 2 | eggs |
| 1/3 | cup sugar |
| 2 | tbsp margarine |
| 1 | dash salt |
| 1 | tbsp lemon rind |
| 1/4 | cup lemon juice |
- Whisk egg yolks, lemon juice, rind, and one half of the 1/3 cup sugar together in a sauce pan. Put on low heat burner, and stir with whisk continuously until thickened.
- Remove from heat, continue stirring until cooled or for two minutes.
- Combine egg whites and salt. Beat until stif peaks form, adding remaining sugar gradually.
- Fold in egg yolk mixture. Bake at 250 F for 30 minutes, and let cool. Cover and chill. (they will sink, be warned!)
