Chilled Lemon Souffle Recipe

Light and delicious : ) For father's day.

Ingredients
2 eggs
1/3 cup sugar
2 tbsp margarine
1 dash salt
1 tbsp lemon rind
1/4 cup lemon juice
Directions
  1. Whisk egg yolks, lemon juice, rind, and one half of the 1/3 cup sugar together in a sauce pan. Put on low heat burner, and stir with whisk continuously until thickened.

  2. Remove from heat, continue stirring until cooled or for two minutes.

  3. Combine egg whites and salt. Beat until stif peaks form, adding remaining sugar gradually.

  4. Fold in egg yolk mixture. Bake at 250 F for 30 minutes, and let cool. Cover and chill. (they will sink, be warned!)
