Banana Walnut Bread Muffins

Makes 12 servings

healthy & filling!

Ingredients
3/4 cup skim milk
1 tbsp lemon juice
3/4 cup dark brown sugar
1/4 cup oat bran
1/4 cup all bran buds
1/4 cup wheat bran
1 omega-3 egg
4 bananas (mashed)
1 cup whole wheat flour
3/4 cup flaxseed
1/4 cup chopped walnuts
2 tbsp cinnamon
1 1/2 tsp baking powder
1 tsp baking soda
Directions
  1. preheat oven to 400°F/200°C

  2. in large bowl: mix milk, lemon juice, sugar, oat bran, all bran and wheat bran. let sit for 5 minutes then add egg and mashed bananas

  3. in small medium bowl: mix all dry ingerdients

  4. pour dry ingredients in wet ingredients and mix well

  5. scoop into muffins cups and bake for 20-25 minutes
