Ingredients

cup skim milk |
| 1 |
tbsp lemon juice |
| 3/4 |
cup dark brown sugar |
| 1/4 |
cup oat bran |
| 1/4 |
cup all bran buds |
| 1/4 |
cup wheat bran |
| 1 |
omega-3 egg |
| 4 |
bananas (mashed) |
| 1 |
cup whole wheat flour |
| 3/4 |
cup flaxseed |
| 1/4 |
cup chopped walnuts |
| 2 |
tbsp cinnamon |
| 1 1/2 |
tsp baking powder |
| 1 |
tsp baking soda |
Directions
- preheat oven to 400°F/200°C
- in large bowl: mix milk, lemon juice, sugar, oat bran, all bran and wheat bran. let sit for 5 minutes then add egg and mashed bananas
- in small medium bowl: mix all dry ingerdients
- pour dry ingredients in wet ingredients and mix well
- scoop into muffins cups and bake for 20-25 minutes
